“Paron Cheese is one of the oldest Italian-style cheese companies in Ontario. Natale Paron established the company in the 1930’s above the Niagara Escarpment from the community of Stoney Creek. Italian-Canadians were settling in the Hamilton area and Paron knew they would be seeking ingredients reminiscent of their homeland. Being a cheesemaker himself, he set up shop, making traditional firm and hard cheese. Later on, he trained his son Louis to assist and eventually take over the company. Paron has won numerous awards, ribbons and trophies at industry competitons.”

“My friend Joseph and I visited the Parons. Joseph, a native Hamiltonian, had driven by the plant and store many times on the way to visit the wineries of Niagara, but he’d never stopped in. We were in for a very pleasant and delicious discovery! The store is part of the ripening room. Wheels of Montasio, Friulano, Hard Goat, Casata and Parmesan cheeses sit on the racks, slowly aging, waiting to be purchased. Smaller cuts are also available for sale. We were told many clients buy entire wheels and let them age even longer in their homes.”
